Here’s the next recipe.  I’m love Italian, but not so much lasagna.  It takes too much time and doesn’t excite my taste buds all that much.
However…Mr. Jiggs really likes lasagna.  Enough that he will order it if we go to an Italian restaurant.  So this is my go-to lasagna recipe, to please my husband.  And I’ll admit that I actually enjoy how this recipe tastes with sausage.  It’s got just a bit more flavor for me.
But probably the biggest selling point of this recipe for me is…no boiling the noodles.  You layer your lasagna with dry noodles and let them cook in the oven!  And it works with regular noodles…no need to get special no boil noodles.

Easy Cheesy Lasagna (no Boil)

1 lb. lean ground beef or Italian Sausage
1/2 cup chopped onion
1 clove garlic, minced
1-32 oz. jar (3 1/2 cups) spaghetti sauce (I used a 26 oz. can)
3/4 cup water (I used 1/2 cup)
1-8 oz. package wide lasagna noodles
2 cups (1 lb.) ricotta cheese or cottage cheese
1/2 cup grated parmesan cheese
1 Tbsp. chopped parsley
3 cups shredded mozzarella cheese

Heat oven to 375.  Brown meat, onion and garlic.  Drain.  Add spaghetti sauce and water.  Combine cottage cheese, parmesan cheese, parsley, and mozzarella cheese in a bowl.  In 13×9 pan, layer 1/3 of sauce mixture, 1/2 of uncooked noodles, 1/2 of cheeses mixed together.  Repeat, ending with sauce.  Cover with foil and bake 1 hr. @ 375.  Let stand for 5-10 minutes to set up.
